🥓🧀 Cheese & Bacon Loaded Sweet Potato Skins (Air Fryer Edition)

These loaded sweet potato skins are everything: golden edges, fluffy middles, sizzling bacon, and rivers of melted cheese. Done faster than the oven and twice as crispy, they’re the ultimate party plate, movie snack, or “I deserve this” dinner.

🧺 You’ll Need (makes about 8 skins):

  • 4 medium sweet potatoes

  • 4 rashers streaky bacon

  • 100g grated cheddar (or any melty cheese you love)

  • 1 tbsp olive oil

  • 1/2 tsp smoked paprika (optional, for extra oomph)

  • Salt & pepper

To serve:

  • 2 spring onions, finely sliced

  • Sour cream or ranch dip

  • Extra crispy bacon bits (if you’re feeling extra)

👩‍🍳 How to Make It:

  1. Pre-cook the sweet potatoes.
    Prick sweet potatoes all over with a fork. Microwave for 6–8 mins, turning halfway, until just tender (not mushy). Let them cool a bit so you don’t burn your hands.

  2. Cook the bacon.
    While potatoes cool, lay bacon in your air fryer basket. Air fry at 180°C (350°F) for 6–8 mins until crispy. Drain on kitchen paper and chop into small bits.

  3. Prep the skins.
    Slice each sweet potato in half lengthwise. Carefully scoop out most of the flesh, leaving about a 1cm border so they keep their shape (save the scooped flesh for mash or soup).

  4. Season & crisp.
    Brush or spray the insides and edges with olive oil. Season with salt, pepper, and smoked paprika. Place skins cut-side up in the air fryer basket (work in batches if needed). Air fry at 200°C (390°F) for 5–6 mins until the edges are starting to crisp.

  5. Load them up.
    Sprinkle each skin generously with grated cheese and chopped bacon. Air fry again at 180°C (350°F) for 3–5 mins, until the cheese is bubbly and golden.

  6. Finish & serve.
    Transfer to a plate. Scatter with spring onions and extra bacon bits. Serve with a dollop of sour cream or ranch dip.
