🍔 Cheeseburger Spaghetti Bolognese

Tonight’s dinner is where spaghetti night meets cheeseburger cravings. Imagine rich, meaty Bolognese sauce with a cheeky ketchup-mustard twist, tangled through pasta and blanketed in molten cheddar.

It’s nostalgic, over-the-top, and borderline addictive. No judgment if you eat it straight from the pot.

🧺 You’ll Need (serves 4):

For the sauce:

  • 500g beef mince (15–20% fat = flavour)

  • 1 onion, finely chopped

  • 2 cloves garlic, minced

  • 1 can chopped tomatoes (400g)

  • 3 tbsp ketchup

  • 1 tbsp yellow mustard

  • 1 tbsp tomato purée

  • 1 beef stock cube or 1 tsp stock powder

  • 1 tsp smoked paprika (optional but chef’s kiss)

  • Salt & pepper

  • Splash of water or beef stock

For the pasta:

  • 350g spaghetti

  • 150g grated cheddar cheese (the meltier, the better)

  • Optional: pickles, extra ketchup or mustard for drizzling, chives for garnish

👩‍🍳 How to Make It:

  1. Brown the beef.
    Heat a large pan over medium-high heat. Add mince and cook, breaking up with a spoon, until browned and starting to crisp. Drain excess fat if needed.

  2. Flavour base.
    Add chopped onion and cook 3–4 mins until softened. Stir in garlic, smoked paprika, and tomato purée. Cook 1 min more.

  3. Sauce it up.
    Pour in chopped tomatoes, ketchup, mustard, crumbled stock cube, and a splash of water. Stir well. Season generously with salt and pepper.

  4. Simmer to perfection.
    Reduce heat and cook for 15–20 mins, stirring occasionally, until thick, rich, and a little glossy. Taste and tweak seasoning — more ketchup for sweetness, mustard for tang.

  5. Meanwhile, pasta.
    Cook spaghetti in salted boiling water according to packet instructions. Drain, reserving a cup of pasta water.

  6. Marry it all.
    Toss drained spaghetti through the sauce. Add a splash of pasta water to loosen if needed. Scatter in half the grated cheese and stir until oozy.

  7. Serve with flair.
    Pile into bowls, top with the rest of the cheese, and let it melt like a cheeseburger crown. Optional: drizzle with ketchup, dot with sliced pickles, sprinkle chives. Live your best life.
