🥓 Creamy Carbonara Fried Rice
✨ Creamy, crispy, cheesy comfort — even if you just made the rice five minutes ago
Hey spontaneous cook,
Who says you need old rice to make epic fried rice? We’re proving them wrong with this Carbonara Fried Rice, made with freshly cooked rice that still gives you all the crispy edges, creamy eggs, and parmesan-laced magic — no waiting overnight required.
🧺 You’ll need (serves 2–3):
150g uncooked white rice (which becomes ~300g cooked)
100g pancetta or bacon, diced
2 garlic cloves, minced
2 eggs
40g grated parmesan (plus more for topping)
1 tbsp butter
Salt & lots of black pepper
Optional: small splash of cream, peas, parsley, chilli flakes
👩🍳 How to make it:
Cook the rice: Rinse it, boil it, and once it’s tender, spread it out on a plate or tray to cool for 5–10 minutes. Fan it, fridge it, or let it chill naturally — the goal is to dry it out slightly so it doesn’t go mushy.
While that’s cooling, fry your pancetta or bacon in a large non-stick pan or wok until crispy. Add the garlic for the last 30 seconds and stir through.
Push everything to one side of the pan. Add a knob of butter, crack in the eggs, and scramble until softly set.
Add your slightly cooled fresh rice to the pan. Stir-fry everything together on a medium-high heat for 2–3 minutes. You’ll start to get those gorgeous crispy 4bits.
Season with salt and black pepper, then stir in the parmesan off the heat. Add a splash of cream if you want extra richness.
Serve hot, topped with more parmesan, black pepper, and a sprinkle of parsley or chilli flakes if you're feeling chaotic.
