  • 2 medium sweet potatoes

  • 2 tbsp cornflour

  • 1 tbsp olive oil

  • Salt & pepper

  • 50g butter

  • 2 tsp garlic granules (or 2 cloves, minced)

  • Optional: chopped parsley, parmesan, or a pinch of chilli flakes
