Sunday Sharer 🌽 Creamy, Cheesy Sweetcorn Bake

Hey flavour fiend,
Put down the salad tongs — tonight we’re going full comfort mode. This one’s cheesy, creamy, sweet ‘n’ salty… and honestly? It might steal the spotlight from your main dish.
Think bubbling cheese, crispy bacon, golden sweetcorn — all baked into one glorious dish. It's a side. It's a dip. It’s a spoon-straight-from-the-dish situation. You decide.
🧺 You’ll need:
2 wheels of Boursin (garlic & herb, of course)
3 tins of sweetcorn, drained (roughly 600–700g)
5 spring onions, finely chopped
75g cheddar, grated
100g mozzarella, grated
10 rashers of cooked streaky bacon, chopped
75g parmesan, for topping
Optional: crusty bread for dunking, or tortilla chips if you’re feeling bold
👩🍳 How to make it:
Preheat your oven to 170°C (fan). Grab a roasting dish that’s up for a cheesy mission.
Add everything into the dish: Boursin, sweetcorn, spring onions, cheddar, mozzarella, and bacon. Get in there and give it all a good mix.
Flatten the top with the back of your spoon — you want even golden coverage.
Sprinkle with parmesan like you mean it. This is the crispy topping your future self will thank you for.
Bake for 10–15 mins, or until it’s bubbling, golden, and calling your name from the oven.
Serve hot, straight from the dish. Tear, dip, scoop, repeat. Try not to burn your mouth in excitement.
