🍍 Sweet & Sour Chicken Thighs with Rice & Veggies

Tonight’s dinner? It’s giving Chinese takeaway classic, but fresher, faster, and more satisfying. Think juicy chicken thighs glazed in a glossy sweet and sour sauce, nestled on fluffy rice and rainbow stir-fried veggies. No packet mixes, no deep fryer, no regrets.
You’ll be scraping the pan. And maybe the plate too.
🧺 You’ll need (serves 3–4):
For the chicken:
6 boneless, skinless chicken thighs (thighs = flavour!)
2 tbsp cornflour
2 tbsp vegetable oil
Salt & pepper
For the sweet & sour sauce:
3 tbsp ketchup
2 tbsp rice vinegar (or white vinegar)
2 tbsp soy sauce
2 tbsp brown sugar
1 tbsp honey (optional but chef’s kiss)
1 tsp garlic granules or 1 clove minced garlic
1 tsp grated ginger (optional but excellent)
Splash of water to loosen
For the veg:
1 red bell pepper, chopped
1 green bell pepper, chopped
1 red onion, sliced
100g sugar snap peas or broccoli
Optional: a few pineapple chunks (don’t @ us)
To serve:
Steamed jasmine or basmati rice
Sesame seeds + spring onions (for that fancy finish)
👩🍳 How to make it:
Crisp the chicken.
Pat chicken thighs dry, season with salt and pepper, and toss in cornflour until lightly coated. Heat oil in a large non-stick pan and sear the thighs for 3–4 mins each side until golden and crispy. Remove and set aside.Sizzle the sauce.
In the same pan, pour in all your sauce ingredients. Simmer for 2–3 mins until thick, glossy, and slightly sticky. Add a splash of water if it looks too intense. Taste — adjust sugar/vinegar to your sweet/sour vibe.Veggie time.
Throw your chopped veg into the pan and stir-fry for 3–4 mins until slightly softened but still crisp. Add pineapple here if using (do it, it’s iconic).Bring it together.
Add the chicken thighs back into the pan. Spoon the sauce and veg over them. Simmer for another 5 mins until everything’s glossy and chicken is cooked through.Serve it up.
Scoop over a bowl of steaming rice. Scatter sesame seeds and spring onions like you’ve got a Michelin star.
