TRENDING RECIPE: Full English Fried Rice 🍳
✨ All the best bits of a fry-up — but make it one-pan and weeknight-friendly
✨ All the breakfast feels… without the breakfast hours
Hey there,
Who says you need toast and a greasy spoon to get those full English vibes? We’ve taken all the best bits — bacon, eggs, mushrooms, tomatoes — and turned them into a one-pan rice dish that’s smoky, saucy, and seriously satisfying.
It’s brunch meets dinner. Fry-up meets risotto. Comfort meets low effort. Top it with a fried egg and thank yourself later.
🧺 You’ll need:
2 tbsp oil
1 onion, chopped
100g bacon lardons
250g mushrooms, sliced
2 tsp dried rosemary
1 x 400g tin chopped tomatoes
200g white rice
800ml veggie stock (made with 2 stock cubes)
100g kale
4 medium eggs
👩🍳 How to make it:
Heat 1 tbsp of oil in a large, deep pan. Add the chopped onion and bacon lardons. Fry for 4–5 mins until the onion’s soft and the bacon’s smelling irresistible.
Add the mushrooms and rosemary. Cook for another 3–4 mins until everything’s golden and glossy.
Stir in the chopped tomatoes and let it bubble for 2–3 mins. Then toss in the rice and mix well until it’s tomato-coated and ready to soak up flavour.
Pour in the stock and bring it to a simmer. Let it cook for about 15 mins, stirring now and then, until the rice is tender and the liquid has mostly disappeared.
Throw in the kale and stir for 2 mins until wilted and green. Season it all to taste — maybe a pinch more rosemary if you’re feeling rustic.
In another pan, fry up the eggs with the remaining oil. You want set whites, runny yolks, and serious spoon-break potential.
Spoon the rice into bowls, top with a golden egg, and dig in while it’s hot. Best enjoyed with a fork in one hand and toast in the other (just saying).
🧡 Why You’ll Love It
