Your Friday Night In = Creamy Boursin Lemon Pasta Bliss ✨
✨ Oven-roasted cheesy joy with big flavour and bigger comfort
Hello pasta pal,
Sometimes dinner feels like a warm hug — and this one comes with lemon zest, creamy cheese, and a roast-garlic glow-up. It’s pasta that tastes like you made an effort… but really, the oven did all the hard work.
We’re roasting Boursin (yes, really), lemon, garlic, and shallots until everything goes soft and golden. Then we stir it through chunky pasta with a splash of pasta water and a flurry of basil. Silky, citrusy, and just a bit posh.
🧺 You’ll need:
1 whole Boursin garlic & herb cheese (150g)
1 small garlic bulb (top sliced off)
1–2 lemon halves, cut side down
2 shallots, peeled & sliced
300g large rigatoni
Olive oil
Black pepper, oregano, dried basil
Fresh basil, for stirring and serving
Optional: extra lemon zest, chilli flakes, or grated parmesan
👩🍳 How to make it:
Preheat your oven to 190°C (fan 170°C). In an ovenproof dish, add the whole Boursin, lemon halves (cut-side down), garlic bulb, and sliced shallots. Drizzle everything with olive oil, then season with black pepper, oregano, and dried basil.
Bake for 40 minutes, until the shallots are golden, the garlic is soft, and the Boursin is just begging to be stirred.
Meanwhile, boil your pasta in salted water. Save a big mug of that glorious starchy water before draining.
When the tray’s out of the oven, squeeze the roasted lemon and garlic into the melted Boursin — use tongs or your brave fingers. Stir until it’s a creamy, tangy sauce of dreams.
Toss in your cooked pasta, a good splash of pasta water, and a handful of fresh basil. Stir until glossy and beautiful.
Serve hot, topped with lemon zest, more pepper, and anything else that makes you feel smug.
